Eggplant (Solanum melongena L.)

It is an annual, herbaceous plant of the Solanaceae family. Its different varieties present a wide range of fruit shapes and colours. It is a low-calorie food, providing several benefits for human health. It is a rich source of Potassium, Magnesium, Calcium and Iron. Globally, 90% of its cultivation is found in the Americas, with only 4% in Europe. It has been estimated that in Greece around 30,000 stremma of eggplant are cultivated every year. Its yields and quality are a function of many factors. A decisive role is played by rational nutrition.
